This led to the creation of ENOCOFI, an analytical laboratory that quickly distinguished itself for its rigor, reliability, punctuality, and precision—essential elements in supporting grapes throughout their journey to becoming quality wine, preserving the potential that each winemaker carefully builds over a year of dedicated vineyard work.

From this privileged vantage point, Cuccuini identified the opportunity to select authentic and expressive Tuscan wines, capable of combining healthfulness with pleasure. This journey was further strengthened through her experience with the Generazione Sangiovese movement, which brings together family-run wineries rooted in Tuscan tradition.

In 2025, she founded Starless Wine with the goal of selecting wines designed for a market that seeks to bring wine back into everyday life—without compromise.
